One Week of Summer Salads

Lucky for me, one of my big cravings lately has been fruit and yummy salads. Since I’m loving these meals so much, I thought I’d share one week of summer salads that I’m enjoying. The first is a salad that Kirby concocted, and the rest are some of my fave Pinterest finds lately.

Day 1: Not Your Mama’s Fruit Salad

Lifestyle blogger Sammy Hill shares one week of summer salads.

Kirby’s creation! This delicious summer salad was a new take on classic fruit salads. Here’s our recipe:

+ Marinate romanella tomatoes in olive oil, S&P, lemon juice

+ Fry & candy slices of peaches in brown sugar and vegetable oil

+ Cut up slices of cucumber and watermelon

+ Chiffonade basil

+ Bake small slices of mozzarella at 350 for 5 minutes

+ Toss everything together and lay baked mozzarella and basil on top

+ Enjoy!


Day 2: Cherry Tomato Couscous Salad

Yummy and light, with lots of herbs!


Day 3: Grilled Romaine Salad with Charred Lemon Vinegarette

We tried this super easy summer salad out a few weeks ago and I proceeded to buy a ton of romaine lettuce to make it again and again.


Day 4: Cucumber, Corn, Black Bean, Tomato & Avocado Salad

Ready in minutes, this is one of our go-to salads to quickly whip together. Don’t skimp on the lime juice either!


Day 5: Caprese Salad

I will never say no to a Caprese salad. Tomatoes are my favourite food, hands down, and I could munch on them with mozzarella and balsamic vinegar all day, every day. Is that weird?


Day 6: Baked Kale + Ricotta Salad

Another salad that we make on the regular is this baked kale and ricotta salad. It’s not really that ‘summery’, but we’ll eat it for dinner any time of year!


Day 7: Healthy Chicken Pasta Salad

Can’t forget a nice pasta salad! This is always a go-to for summer barbeques when I don’t know what to bring. I really like this one with chicken, avocado and tomatoes.
