One of my greatest weaknesses in life is the BC Sunny Start from Triple O’s. I’m not joking, I crave that delicious breakfast sandwich on the regular. If you’re not from British Columbia, I SINCERELY APOLOGIZE that you don’t know what I’m talking about. The BC Sunny Start is a breakfast sandwich made of bacon, cheddar cheese, grilled tomato, fried egg and the “Triple O’s Sauce’ on a bun. It is so f**king good.
My boyfriend Kirby was against going to Triple O’s every weekend morning for my BC Sunny Start, so he decided to work his magic in the kitchen and create a similar, and dare I say it, BETTER breakfast sandwich for me. He’s an angel.
This tasty sandwich has become my go-to for a lazy weekend morning. I’m obsessed. The sauce, the toasted bun, the perfectly fried egg – it’s perfection.
So without further ado, we’re sharing the recipe. ?
KIRBY’S BREAKFAST SANDWICH RECIPE
Ingredients
- Cheddar Cheese Bun
- Bacon
- Avocado
- Tomato
- Egg
- Ketchup
- Mayonnaise
- Relish
- Cheddar Cheese
Directions
- Turn oven on to 400 degrees. Lay bacon out on a baking sheet and bake in the oven until crispy, about 15 minutes.
- While the bacon is getting crispy, fry an egg with a bit of salt and pepper.
- Slice tomato and avocado.
- Mix mayonnaise, ketchup and relish for the sauce.
- When bacon is almost done, add some shredded cheese and a tomato slice to the bun and toast in the oven until cheese is melted.
- Once toasted, coat the bun with sauce, add tomato, avocado, fried egg, bacon and a little extra sauce on top.
- ENJOY!
Triple O’s BC Sunny Start will always have a special place in my heart, but Kirby’s Breakfast Sandwich Extraordinaire will have a place in my belly. YUM.
