Wellness Wednesday: My Favourite Healthy Lunches

Happy Wellness Wednesday! 

I am trying my best to eat really well while cooped up at home and not spend all day snacking (so difficult). I am also not drinking alcohol for a few weeks and staying on top of my at-home workout routine. I’m doing my best, but sometimes it’s hard to stay on track with healthy eating, especially when you’re bored at home! In case you’re in the same boat, I am sharing some of my favourite healthy lunches to keep the healthy eating going!

Mediterranean Quinoa Bowl

This is my #1 go-to for lunch! I mix together quinoa, cherry tomatoes, cucumber, Kalamata olives and feta cheese and top with Balsamic Vinegar. Sometimes I add chicken as well, and you can add bell pepper and onions if you like.

Turkey Sandwich with Avocado

I’m not a big fan of turkey dinner (don’t hate me), but I do love a good turkey sandwich for lunch. Kirby is a pro sandwich maker and he toasts the bread perfectly. I add a thin layer of mayo, mustard, spinach, tomato and avocado.

Roasted Veggies Bowl With Kale

I love that this meal can be prepped and just warmed up for lunch. We love to eat roasted Brussels sprouts, zucchini, sweet potato and broccoli. I like to throw these roasted veggies in a bowl with some kale, Balsamic glaze and a bit of hummus.

Pasta Salad

Another easy meal that you can prep the night before is a pasta salad. If I’m making pasta for dinner, I try to make extra for lunch the next day and add tomatoes, cucumber, black olives and either chicken, salami or bacon.

Chicken Hummus Pita 

Lately, Kirby and I have been really into eating Pita bread and like to make chicken gyros with extra Tzatziki! They are messy, but so yummy.
